Cinnamon Raisin Almond Flour Bars

To be fair I don't really know how to categorize these. I was bored, but inspired, and I was at a standstill with the large bag of almond flour I purchased several weeks ago. So I went into my kitchen determined to use at least half the bag. Lo and behold, these are gooooood. Good enough that I feel compelled to put them on my site despite not really knowing what they are. The texture is very much akin to a brownie, but obviously these aren't a brownie. I also debated calling them a blondie, but it felt somehow dishonest. So I landed on bars, which they are but it's a category I feel sells them short. Whatever they are, you wanna make these! I'm still open to name suggestions - hit me up!

This recipe is for a 9x12 pan; for a 9x9 pan, half the recipe


4 eggs

1 cup brown sugar

1 cup white sugar

1 cup coconut oil, refined (or use any vegetable oil)

2 tablespoons cinnamon

2 teaspoons vanilla extract

1 teaspoon salt

2 teaspoons baking powder

4 cups almond flour

1-2 cups raisins

1. Preheat the oven to 350°F

2. Crack the eggs into a large bowl and whisk using a hand mixer or fork. Add the sugars and cream together.

3. Add the oil, cinnamon, vanilla, salt and baking powder and mix well to combine.

4. Add the almond flour and mix well. Lastly, stir in the raisins.

5. Transfer to the preheated oven and bake for 45-55 minutes, until a knife down the center comes out clean. Allow the bars to cool completely before cutting into them; while they're warm they will be crumbly and will not maintain their shape. Once cooled, cut them into equal size squares.
